OK...SO GLAD THAT EVERYONE ENJOYED THE SALSA. HERE IS THE RECIPE SO THAT YOU CAN ENJOY IT MORE OFTEN! THIS AMOUNT MAKES APPROXIMATELY 2.5 QUARTS. I'VE ALWAYS MADE IT IN LARGE QUANTITIES, SO USE LESS OF EACH ACCORDING TO HOW MUCH YOU WANT.

3 POUNDS ROMA TOMATOES

1 BUNCH CILANTRO

1 LARGE ONION  OF YOUR CHOICE ( I USE RED)

4 JALAPENO PEPPERS (SEEDS IN MAKES IT HOTTER)

2 LIMES FULLY SQUEEZED INCLUDING A LITTLE ZEST

1TBLS OLIVE OIL

SALT AND PEPPER TO TASTE

YOU CAN USE A SMALL FOOD PROCESSOR OR CHOP IT ALL BY HAND (NOT RECOMMENDED) A BLENDER MAKES IT A BIT TOO LIQUIFIED.

IT IS BEST TO CHILL IT IN THE FRIDE OVERNIGHT SO ALL INGREDIENTS MIX TOGETHER WELL. IT JUST TASTES BETTER THAT WAY.

For any one who makes it , do not let your other half  go shoping for the ingredents.  No diced onions or anything in a tube that is green in color.

   Found out hte hard way the wife did not like the time saving idea. Just a word of warning.

   Honey, your salsa is great.
